Apricot & Brie Crostini

Who doesn’t love an elegant appetizer with incredible flavor that’s also a snap to make? Apricot and Brie Crostini are delicious enough to stand alone as a single appetizer but also work well on a charcuterie board.

Buttery Brie, sweet apricot jam, and crunchy crostini make a fantastic appetizer that your guests will love!

Ingredients

To make Apricot and Brie Crostini, you’ll need just a handful of ingredients:

  • Baguette – Try to pick this up the day of so it’s as fresh as possible.
  • Brie cheese – We usually pick up a round at Trader Joe’s so we always have one on hand.
  • Apricot preserves – We’re partial to the Bonne Maman brand, but we’ve never had an apricot preserve we didn’t like!
  • Olive oil – this helps crisp up the crostini.
  • Salt – for seasoning the crostini.
  • Fresh thyme – this is just for garnishing but the green color against the orange preserves really makes the dish pop!
  • Chopped, toasted walnuts – these are optional since the crostini adds a crunchy texture contrast to the soft brie and jam. They do add a nice flavor, so add some if you like!

Step-by-Step Instructions

1. Make the Crostini
Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and lightly brush each side with olive oil. Sprinkle with a pinch or two of salt. Bake for 8-10 minutes, flipping halfway, until the bread is golden brown. Remove the crostini from the baking sheet and place them on a rack to cool.

2. Slice the Brie
While the crostini cools, slice the brie into small, bite-sized pieces that will fit neatly on the bread rounds. Brie’s creamy texture can be a bit sticky, so try dipping your knife in warm water between cuts.

3. Assemble the Crostini
Spread a thin layer of apricot preserves onto each crostini. Top with a piece of Brie and press gently to secure it.

4. Warm and Serve
Place the assembled crostini back in the oven for 2-3 minutes to warm the Brie slightly (optional). Remove from the oven and add the chopped walnuts (if using) and garnish with the fresh thyme.
