This easy air fryer brie is one of the best ways to jazz up your charcuterie boards! A wheel of brie, air-fried until the inside is soft and spreadable, is a great appetizer that’s perfect for special occasions, a casual get-together with friends, or a romantic night in. It’s one of our favorite appetizers during the holiday season because it comes together with minimal effort – and who doesn’t love the rich flavor of gooey brie?
Brie is a soft cheese with an edible rind that makes it perfect for air frying – the rind remains intact while the inside becomes a gooey cheese that’s perfect for spreading on crostini or crackers. It’s delicious on its own with a few baguette slices, or add toppings either before or after air frying. It can easily be made in the oven, but we love that it helps keep the house cooler during the summer, and it’s ready a few minutes sooner in the air fryer. If we’re hosting a big group, it also leaves the oven free for other dishes.

Air Fryer Brie with Puff Pastry
An easy way to elevate air fryer brie is to wrap it in a thawed sheet of puff pastry dough. Just place the scored brie wheel in the center of the pastry, then pull up the corners and fold it until it’s completely sealed, cutting off any excess pastry dough with a sharp knife. Brush an egg wash over the top of the puff pastry using a pastry brush, then place it in the center of the air fryer basket on a piece of parchment paper. Then just set your air fryer to 350°F and bake it until the pastry is puffed and golden brown, about 15-20 minutes.
You can top the scored brie with fruit preserves, nuts, honey, or any other combination before wrapping it with buttery puff pastry for the perfect bite! In a pinch, you can also try wrapping it with crescent rolls, too. This is always one of our favorite things to make – it’s the perfect appetizer to serve as the anchor on a charcuterie board.
Another option would be to make air fryer brie bites! Cut out small circles, then press them into a greased mini-muffin tin. Add bite-size pieces of brie to each tin, then top with a small dollop of jam, nuts, fresh herbs, etc., and bake it for the same amount of time as directed above. These are fantastic air fryer appetizers for any cheese lover!
Step-by-Step Instructions
Start with a brie wheel that’s about eight ounces. You can find these at almost any grocery store (even the Walmart near me has them for just $5)! If your brie comes in a box, you can leave it in the base of the box (discard the box top) while air frying and serving, or you can remove and discard the whole thing – it’s entirely up to you.
- Bring the brie to room temperature – about 30-60 minutes.
- Start by gently scoring the top of the brie in a criss-cross pattern. This helps the cheese to melt evenly while allowing any toppings you add to seep into the cheese and add more flavor.
- Next, you’ll preheat your air fryer to 350°F. This temperature is the sweet spot – it’s just hot enough that the brie heats completely through without the outer layer turning too hard or rubbery. The center gets deliciously gooey, which is exactly what you want!
- Place the scored brie in the air fryer basket and air fry for 5 minutes. Check it to see if it’s melty even in the center; if not, keep air frying for a minute at a time until it’s the consistency you like best.
Baked Brie Toppings
There are so many different combinations you can use to top air fryer baked brie. You can add these either before or after it goes in the air fryer, but I’ll often add them after since the ingredients will still soften on the hot brie round. Nuts will get slightly toasted, which is a good argument for adding them beforehand, but fresh greens and herbs should always go on after.
- Apricot preserves and toasted almonds
- Fresh raspberries and sweet honey
- Pesto and sun-dried tomatoes
- Raspberry jam and walnuts
- Maple syrup and pecans
- Cranberry sauce and thyme
- Fig jam and chopped walnuts or pecans
- Fresh figs and a drizzle of honey
- A sprinkle of brown sugar and chopped nuts
- Roasted garlic and rosemary
- Apple slices
- Balsamic glaze and arugula
- Grilled peach slices and hazelnuts
- Blackberry compote and lemon zest
- Roasted bell pepper and olives
- Spicy mango salsa
- Fresh fruits of any kind – use what’s in season!
- Try topping it with some whipped honey
How to Avoid Rubbery Baked Brie
It’s possible for brie that’s heated until melty to turn rubbery if it’s cooked too long. You’ll want to keep a close eye on the cooking time as baked brie in air fryer doesn’t take long. A perfectly melted center shouldn’t take longer than 5 to 7 minutes at 350°F. You can always put it back in for a minute or two if you find it’s not softened enough, but you can’t take away a rubbery texture from overcooking!
More tips:
- Bring the brie to room temperature before baking to ensure it cooks evenly.
- Make sure your air fryer is fully preheated before adding the brie.
- Score the top of the brie, which will help it melt more evenly.
Storing Leftovers
Wrap leftover baked brie with plastic wrap, place it in an airtight container, and enjoy it within a few days. It can be reheated in the air fryer the same way it was baked, although it will benefit from being in a dish this time around (if it’s been cut into the cheese might ooze everywhere).
