Cottage cheese probably isn’t the first cheese that comes to mind when you think of a charcuterie board. Once you’ve tried it whipped into a creamy dip topped with hot honey, crunchy crumbles of bacon, and freshly chopped herbs, you’re sure to change your mind!
Ingredients
- Whole milk cottage cheese (Good Culture is a fantastic brand)
- Hot honey (or regular honey + crushed red pepper flakes)
- Crumbled bacon
- Chopped herbs
The beauty of cottage cheese dip is how simple it is to make and adjust the amounts. Use just a cup of cottage cheese for 1-2 people or an entire 16 oz tub if serving it at a party. Double the bacon or skip it entirely. Use regular honey if you don’t like spice, or go extra-hot with hot honey and a hefty sprinkling of crushed red pepper.
Equipment Needed
A food processor, blender, or immersion blender is needed for whipping the cream cheese into a creamy consistency. It doesn’t take much power or time, so any of these will work great!
You should have a pretty bowl handy for serving and a spatula to scrape down the sides of the bowl.
How to Make Whipped Cottage Cheese Dip
Cook the bacon and set it on paper towels to drain and cool.
Place the cottage cheese in the bowl of a food processor or blender (or into a mixing bowl and use an immersion blender). Blend just until it’s smooth and creamy (over-blending will make it more liquidy, so stop as soon as its texture is smooth).
Pour it into a serving dish. Drizzle with plenty of hot honey and freshly chopped herbs. Crumble the bacon and sprinkle it on top. Serve it with crackers and fresh, crunchy vegetables.
